The name
Cinder
Named for what’s left when the fire does its job: heat, flavor, a little ash on the crust edge. The truck is small on purpose. The menu is short on purpose. The oven is not a toy.
Dough ferments cold for days. Sauce is simple. Cheese is chosen for melt, not Instagram stretch. If the wood isn’t right, we wait. If the lot’s dead, we learn and move.
